Mini Quiche

Low in carbs and packed full of protein, fats, vitamins and minerals, these little delights are the perfect snack option! They also double (triple!) up as a breakfast/lunch option.



Ingredients

  • 6 eggs

  • 120g edam cheese, grated

  • 250g cottage cheese

  • 2 courgettes, grated

  • 1 carrot, grated

  • 1 tsp dried oregano

  • 1 brown onion, diced

  • 2 Tbsp extra virgin olive oil


Method

  1. Preheat oven to 180C bake

  2. Whisk the eggs in a large bowl

  3. Add cheeses, courgette, carrot, oregano, onion and oil. Stir until combined

  4. Line each muffin case with baking paper/ cupcake cases and pour in egg mixture

  5. Bake for 25 minutes or until lightly browned.

  6. Store in an airtight container and consume within a week.


Makes 9 quiches.
