High in fibre and refined sugar-free, this berry banana loaf is a superb addition to any lunchbox. Alternatively, toast and top with plenty of greek yoghurt and nut butter as a delicious afternoon tea option.
Ingredients
2 large ripe bananas
1 cup berries (fresh or frozen)
1 ¼ cups flour
½ cup oats
1 tsp cinnamon
4 tbsp extra virgin olive oil
2 eggs
2 tbsp almond milk
1 tsp vanilla extract
1 ½ tsp baking powder
½ tsp baking soda
Optional: 1 Tbsp pumpkin seeds as topping
Method
Preheat the oven to 180c. Line greased loaf tin with baking paper.
In a large bowl, mash the bananas. Whisk in the eggs, milk, vanilla and olive oil.
In another bowl, mix together dry ingredients (flour, oats, cinnamon, baking soda and baking powder)
Fold the dry ingredients into the wet and mix well. Stir through berries.
Pour the mixture into the tin and spread out evenly. Top with oats/seeds if desired
Bake for 45 minutes. Allow to cool in the tin for 10 minutes before turning out and cooling on a rack.
