The perfect meal to start your Sunday! High in protein, it'll keep you going all day!
1 onion, diced finely
3 cloves garlic, diced
1tsp chilli flakes
2Tbsp extra virgin olive oil
1 capsicum, diced
100g chorizo, sliced thinly (optional)
2 tins whole peeled tomatoes
1 handful coriander, finely sliced
Sourdough, to serve
Heat the oil in a large frying pan, on medium heat. Add onion and garlic and cook for 2-3 minutes or until onion is soft and lightly browned.
Add spices, chilli flakes, capsicum, and chorizo, if using. Cook for 1-2 minutes until fragrant.
Add the tinned tomatoes and stir to combine. Cover and leave to simmer for 15 minutes or until the mixture has reduced and thickened.
Using a spoon, make 4 'wells' in the sauce and crack eggs into each hole. Scatter bocconcini balls throughout the mixture. Cover and cook for another 5 minutes or until the egg whites have set and the bocconcini has softened.
Top with coriander and serve with sourdough.
