Shakshuka

The perfect meal to start your Sunday! High in protein, it'll keep you going all day!



Ingredients

  • 1 onion, diced finely

  • 3 cloves garlic, diced

  • 2tsp cumin

  • 2tsp paprika

  • 1tsp chilli flakes

  • 2Tbsp extra virgin olive oil

  • 1 capsicum, diced

  • 100g chorizo, sliced thinly (optional)

  • 2 tins whole peeled tomatoes

  • 4 eggs

  • 125g bocconcini

  • 1 handful coriander, finely sliced

  • Sourdough, to serve

Method

  1. Heat the oil in a large frying pan, on medium heat. Add onion and garlic and cook for 2-3 minutes or until onion is soft and lightly browned.

  2. Add spices, chilli flakes, capsicum, and chorizo, if using. Cook for 1-2 minutes until fragrant.

  3. Add the tinned tomatoes and stir to combine. Cover and leave to simmer for 15 minutes or until the mixture has reduced and thickened.

  4. Using a spoon, make 4 'wells' in the sauce and crack eggs into each hole. Scatter bocconcini balls throughout the mixture. Cover and cook for another 5 minutes or until the egg whites have set and the bocconcini has softened.

  5. Top with coriander and serve with sourdough.
