Homemade Steak Tortillas

These versatile tortillas are perfect with any protein! Serve as tacos with fresh fish and a tomato and mango salsa, as mince burritos, steak tortillas or even mexican style chicken!

Ingredients


Tortillas

  • 1 1/4 cups high-grade flour

  • 1 cup acidophilus or greek yoghurt

  • 1 tsp mixed herbs

Steak

  • 500g steak of your choice (we used rump)

  • 2tsp paprika

  • 2tsp cumin

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/4 tsp chilli flakes

  • 2 Tbsp olive oil

  • Salt and pepper

  • Finely chopped coriander, for garnishing

Method

Tortilla (makes 4)

  1. Add all tortilla ingredients to a mixing bowl and stir until ingredients are combined into a dough

  2. Tip dough onto a lightly floured benchtop and knead until it becomes stretchy and elastic (roughly 3-4 minutes). Cover and leave to rest for 30 minutes

  3. Once rested, cut dough into 4, roll into balls

  4. Using a rolling pin and a lightly floured surface, roll dough out to desired circular shape. Repeat with all 4 pieces of dough. Once rolled out make sure not to stack tortillas on top of each other as they will stick together.

  5. Heat a pan on the stovetop, over medium-high heat and add a small amount of oil.

  6. Once the pan is hot, place one of the doughs into the pan and allow to cook for 45 seconds to 1 minute, or until the bottom surface has a few pale brown spots and the top, uncooked surface is bubbly.

  7. Flip tortilla over and cook for another 15-20 seconds. The tortilla should be soft with a few pale brown spots

  8. Remove from heat

  9. Repeat cooking process with the remaining uncooked tortillas

Steak

  1. Mix spices, garlic powder, onion powder and chilli flakes together in a bowl until well combined. Then rub spice mix over steak until well covered.

  2. Leave to rest for at least 20 minutes (the longer the meat rests, the more flavour it will have)

  3. Heat BBQ or pan over a hot heat. Add a small amount of oil to pan/bbq hot plate to stop the meat from sticking

  4. Once hot plate/pan is hot, add steak. Cook for 3-4 minutes on each side (medium-rare).

  5. Remove from heat and leave to rest for 5 minutes.

  6. Slice lengthways into strips and garnish with coriander

Serves 4
